Job Requirements
- High school diploma or equivalent
- Prior experience as a sushi chef or in a similar role
- Knowledge of sushi preparation and Japanese culinary techniques
- Ability to handle kitchen equipment safely
- Capacity to work under pressure in a fast-paced setting

- Ability to work flexible hours including weekends and holidays

Job Duties
- Provide the highest and most efficient level of hospitality service to our members
- Work in the designated sushi station as set by Sushi Chef and Head Chef
- Organize the assigned work area and efficiently put away orders
- Prepare and deliver the execution of the food dishes within recommended time frames to meet members expectations
- Operate kitchen equipment including rice cooker, tempura fryer pan, ovens, stoves, grills, microwaves, and fryers
- Produce quality product in a timely and efficient manner for the membership or team members
- Maintain cleanliness and sanitation at the assigned work area
- Prepare and cook food items by the recipe and to specification
- Prepare ingredients for cooking including butchering, portioning, chopping, and storing food
- Prepare all menu items strictly following recipes and yield guide
- Cook food according to recipes, quality standards, presentation standards, and food preparation checklist and breakdowns
- Wash and put away fresh produce and prepare them according to recipe and recommended procedures
- Check supplies and prep lists and ensure all items are prepped in a timely fashion
- Replenish service lines as needed and restock and prepare the workstation for the next shift
- Ensure that all products are stored properly in the correct location at appropriate levels
- Communicate any assistance needed during busy periods and report incidents to Sushi Chef, Head Chef, Executive Sous Chef or Chef de Cuisine
- Serve food in proper portions on correct serving vessels and plates
- Wash and disinfect kitchen area, workstations, tables, tools, knives and other equipment
- Maintain correct portion size and quality of food to club standards
- Minimize waste and maintain controls to achieve forecasted food cost
- Review status of work and follow-up actions required with Sushi Chef before leaving
- Assist in training and development of new cooks
- Assist other team members in the kitchen when needed or perform any other tasks assigned by management
