Job Requirements

  • High school diploma or equivalent
  • experience in sushi preparation or related culinary field
  • ability to work flexible hours including weekends
  • proficiency in knife skills related to sushi and sashimi
  • ability to communicate effectively in English
  • physical ability to perform job tasks including lifting up to 50 pounds
  • compliance with safety and sanitation standards
  • willingness to work in fast-paced and variable environment

Job Qualifications

  • Previous experience as a sushi cook or similar culinary role
  • knowledge of Japanese cuisine and sushi preparation
  • proficiency in using sushi and sashimi knives
  • ability to follow recipes and food safety standards
  • effective communication skills
  • ability to multitask in a fast-paced kitchen
  • physical stamina to stand and lift during shifts
  • team-oriented mindset
  • food safety certification is a plus

Job Duties

  • Prepare food items and ingredients according to prescribed recipes and special requests
  • butcher whole fish and prepare consumer-sized portions
  • use knives proficiently including sushi and sashimi knives
  • safely operate all necessary tools and equipment
  • work varied hours including weekends
  • communicate to perform and follow written and spoken directions
  • multitask calmly and effectively in a busy environment
  • work in confined, crowded, noisy and variable temperature spaces
  • move and lift up to 50 pounds
  • stand and walk safely for an entire shift
  • follow prescribed portioning controls and par levels
  • maintain food safety and quality standards
  • read thermometers correctly
  • communicate food delays or issues to coordinator
  • account accurately for all kitchen items
  • understand and follow food allergy procedures and special orders
  • comply with safety and sanitation guidelines
  • follow all rules, policies, and conditions of employment
  • be a team player
  • perform other duties as assigned
