Job Requirements
- High school diploma or equivalent
- Prior experience in sushi preparation or culinary arts preferred
- Ability to use knives safely and proficiently
- Availability to work varied shifts including weekends
- Ability to follow written and spoken instructions
- Ability to multitask under pressure
- Physical ability to stand and walk for extended periods
- Ability to lift and move weights as required
- Willingness to work in a noisy, crowded, and temperature-variable environment
- Commitment to maintaining food safety and sanitation standards
Job Qualifications
- High school diploma or equivalent
- Experience in sushi preparation or related culinary field preferred
- Proficiency with sushi knives and fish butchering
- Strong understanding of food safety standards and sanitation
- Ability to work efficiently in a fast-paced kitchen
- Good communication skills
- Ability to multitask in a busy environment
- Attention to detail and quality
- Physical stamina to stand for long periods and lift weights up to 50 pounds
Job Duties
- Prepare food items and ingredients needed for menu items including sushi, maki, nigiri, and sashimi according to prescribed recipes and special requests
- Butcher whole fish and cut, trim and prepare consumer-sized portions of fish
- Use knives proficiently including sushi and sashimi knives
- Safely and effectively operate all necessary tools and equipment
- Work a variety of hours, days, and shifts including weekends
- Effectively communicate to perform and follow job requirements in written and spoken directions
- Multitask calmly and effectively in a busy, stressful environment
- Work in a confined, crowded space with variable noise and temperature levels
- Move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, occasionally move and/or lift up to 50 pounds
- Stand and walk for entire shifts and move safely through all restaurant areas, including stairs and uneven or slick surfaces
- Follow all prescribed portioning controls and par levels and maintain food safety and quality standards
- Read thermometers correctly and efficiently
- Communicate any food delays or issues to the coordinator
- Accurately account for all items coming out of the kitchen
- Understand and follow food allergy procedures and special orders
- Comply with all safety and sanitation guidelines and procedures
- Follow all rules, policies, procedures and employment conditions
- Get along well with others and be a team player
- Perform other duties as assigned
