Job Requirements

  • High school diploma or equivalent
  • Previous experience in sushi preparation preferred
  • Ability to use sushi and sashimi knives proficiently
  • Ability to communicate effectively in English
  • Ability to work flexible hours including weekends
  • Physical ability to stand for long periods and lift up to 50 pounds
  • Willingness to work in a fast-paced, confined kitchen environment

Job Qualifications

  • High school diploma or equivalent
  • Previous experience in sushi preparation preferred
  • Proficient knife skills especially with sushi and sashimi knives
  • Ability to work in a fast-paced team environment
  • Strong communication skills in English
  • Knowledge of food safety and sanitation standards
  • Ability to multitask and handle stress effectively
  • Physical ability to stand for long shifts and lift up to 50 pounds
  • Willingness to work flexible hours including weekends

Job Duties

  • Prepare food items and ingredients needed for menu items including sushi, maki, nigiri and sashimi according to prescribed recipes and/or special requests
  • Butcher whole fish and cut, trim and prepare consumer-sized portions of fish
  • Use knives proficiently including sushi and sashimi knives
  • Safely and effectively use and operate all necessary tools and equipment including knives
  • Work a variety of hours, days and shifts including weekends
  • Communicate effectively to perform and follow job requirements in written and spoken form
  • Multitask calmly and effectively in a busy, stressful environment
  • Work in a confined, crowded space of variable noise and temperature levels
  • Follow prescribed portioning controls and maintain food safety and quality standards
  • Read thermometers correctly and efficiently
  • Communicate food delays or issues to Coordinator
  • Accurately account for all items coming out of the kitchen
  • Understand and follow food allergy procedures and special orders/restrictions
  • Comply with safety and sanitation guidelines and procedures
  • Follow rules, policies, procedures and conditions of employment outlined in the Employee Handbook
  • Collaborate well with others and be a team player
  • Perform other duties as assigned
