Job Requirements

  • Proven experience as a sushi cook or similar role in a high-volume or fine dining environment
  • basic knowledge of traditional and modern sushi preparation rice techniques and knife skills
  • strong understanding of food safety hygiene and handling raw fish
  • creative approach to menu development and presentation
  • excellent organizational and time management skills
  • ability to work under pressure while maintaining attention to detail
  • food safety certificate preferred in va
  • willingness to learn and grow
  • ability to stand for extended periods
  • comfortable working in a fast-paced kitchen environment
  • manual dexterity for knife work and delicate preparations
  • hours wednesday-sunday 2-10pm

Job Duties

  • Prepare a variety of sushi including nigiri sashimi maki rolls and specialty items with precision and artistry
  • ensure freshness and quality of all fish seafood rice and other ingredients
  • work with executive chef executive sous chef to create a fresh enticing menu that changes regularly for members
  • maintain clean and organized workstations in compliance with health and safety regulations
  • collaborate with the culinary team to develop seasonal and specialty sushi menus
  • engage with guests when appropriate explaining dishes and accommodating special requests
  • manage inventory levels monitor product rotation and minimize waste
  • train and mentor junior kitchen staff in sushi preparation and knife techniques
  • uphold consistent portion sizes and presentation standards
