Job Requirements
- Relevant experience in Japanese-style cooking
- Relevant experience working in a sushi restaurant
- Ability to perform all duties and serve in whatever capacity needed
- Ability to follow recipes, portion controls, and presentation specifications
- Ability to maintain safety and sanitation standards
- Ability to communicate effectively with management
- Ability to maintain proper pH for sushi rice and document it
- Commitment to maintain a clean and organized work environment
- Ability to respond promptly to food preparation requests
- Flexibility to perform additional duties as assigned

Job Duties
- Follow standard preparation and cooking procedures of the assigned facility as designated by the manager or chef
- Follow all recipes, portion controls, and presentation specifications as set by the restaurant
- Coordinate the delivery of all foods within pre-set time standards
- Demonstrate product standards and recipe knowledge daily
- Set up, maintain side work, and/or close stations for scheduled shift including checking and breaking down and cleaning equipment
- Prepare and plate station food items according to specifications and pre-set time limits
- Ensure safety and sanitation standards are maintained
- Properly use personal protective equipment
- Maintain a clean, neat, well-groomed appearance
- Respond to all callbacks and echos to ensure ordered food is prepared on time
- Maintain the proper pH for rice and document it in the pH log
- Ensure hot food stays hot and cold food stays cold
- Record all waste on the standard form when it occurs
- Communicate any product runouts, equipment issues, and quality of service problems to the MOD immediately
- Welcome and acknowledge guests according to company standards, when applicable
- Assist with the cleaning, sanitation, and organization of the kitchen, walk-in coolers, and all storage areas
- Order ingredients and supplies as directed by the manager or chef
- Clean, sanitize, and organize all kitchen areas, walk-in coolers, and all storage areas according to OTG specifications
- Develop and maintain positive working relationships with others and work toward the goal of customer satisfaction
- Ensure adherence to quality expectations and standards
- Perform additional responsibilities as requested by the chef or manager at any time
