Job Requirements

  • High school diploma or equivalent GED
  • minimum of 1 year of closely related sushi cooking experience with food preparation skills and knowledge of HACCP standards
  • able to pass company provided food and safety sanitation class
  • work experience in a high volume and casual dining restaurant environment
  • ability to bend, twist, and stand to perform normal job functions
  • ability to lift and/or move up to 40 pounds
  • ability to speak, read and comprehend instructions, short correspondence and policy documents
  • ability to converse comfortably with customers
  • frequently works with sharp knives and utensils
  • frequently immerses hands in water and water diluted with chemical solutions

Job Qualifications

  • High school diploma or equivalent GED
  • minimum of 1 year of closely related sushi cooking experience with food preparation skills and knowledge of HACCP standards
  • food knowledge of sushi
  • ability to pass company provided food and safety sanitation class
  • work experience in a high volume and casual dining restaurant environment
  • ability to speak, read and comprehend instructions, short correspondence and policy documents
  • ability to converse comfortably with customers
  • ability to bend, twist, and stand to perform normal job functions
  • ability to lift and/or move up to 40 pounds
  • ability to speak and write Japanese a plus

Job Duties

  • Follows recipes and/or product directions for proper food preparation and presentation
  • follows menus, estimates food requirements, checks production and keeps records in order to accurately plan production requirements and requisition supplies and equipment as needed
  • practices excellent food safety and sanitation practices and complies with HACCP standards
  • transfers supplies and equipment between storage and work areas by hand or cart
  • prepares appropriate equipment for cooking
  • operates kitchen utensils and/or equipment used for heating, weighing, measuring, mixing, washing, peeling, cutting, grinding, stirring, straining, slicing, assembling and kneading of food products
  • ensures proper food handling procedures are followed for wrapping, labeling, dating, stocking, storing, rotating and checking temperature of products
  • receives and inventories food and beverage product and supplies
  • cleans and sanitizes workstation and equipment
  • stocks, dates, rotates and checks temperature of product
