Job Requirements

  • High school diploma or equivalent
  • Previous culinary or sushi preparation experience preferred
  • Ability to use knives proficiently and safely
  • Available to work flexible hours including weekends
  • Capable of working in a fast-paced and sometimes stressful environment
  • Ability to stand for long periods and lift up to 50 pounds
  • Effective communication skills

Job Qualifications

  • Previous experience as a sushi or maki cook preferred
  • Proficient knife skills including sushi and sashimi knives
  • Ability to work in a fast-paced kitchen environment

Job Duties

  • Prepare food items and ingredients needed for menu items according to prescribed recipes and special requests
  • Butcher whole fish and cut, trim and prepare consumer-sized portions of fish
  • Use knives proficiently including sushi and sashimi knives
  • Safely and effectively use and operate all necessary tools and equipment including knives
  • Work a variety of hours, days and shifts including weekends
  • Effectively communicate in order to perform and follow job requirements in both written and spoken directions
  • Multitask calmly and effectively in a busy, stressful environment
  • Work in a confined, crowded space with variable noise and temperature levels
  • Move and lift up to 10 pounds, frequently move and lift up to 25 pounds, and occasionally move and lift up to 50 pounds
  • Stand and walk for an entire shift and move safely through all areas of the restaurant including stairs and uneven or slick surfaces
  • Follow all prescribed portioning controls and par levels and maintain food safety and quality standards
  • Read a thermometer correctly and efficiently
  • Communicate any food delays or issues to Coordinator
  • Accurately account for all items coming out of the kitchen
  • Understand and follow the food allergy procedure and special order restrictions
  • Comply with all safety and sanitation guidelines and procedures
  • Follow all rules, policies, procedures and conditions of employment as outlined in the Employee Handbook
  • Get along well with others and be a team player
  • Perform other duties as assigned
