Job Requirements

  • Minimum of 1-2 years of professional experience as a sushi cook
  • Extensive knowledge of sushi preparation techniques including knife skills and fish butchery
  • Strong understanding of food safety and sanitation practices
  • Ability to work in a fast-paced environment with attention to detail
  • Creativity and passion for sushi
  • Excellent communication and teamwork skills
  • Commitment to fostering a supportive kitchen environment
  • Willingness to learn and accept feedback
  • Certification(s) for food safety is a bonus
  • Flexibility to work varied shifts including evenings and weekends
  • Legal authorization to work in the USA

Job Qualifications

  • Minimum of 1-2 years of professional experience as a sushi cook in a high-volume, high-quality sushi restaurant
  • Extensive knowledge of sushi preparation techniques, including knife skills, fish butchery, rice preparation, and plating
  • Strong understanding of food safety and sanitation practices, particularly with raw fish and seafood
  • Ability to work in a fast-paced environment while maintaining attention to detail and high standards
  • Creativity and passion for sushi with a commitment to continuous learning and innovation
  • Excellent communication and teamwork skills
  • A commitment to fostering a supportive and engaging experience for your team members and guests
  • A willingness to learn and an openness to feedback, coaching, and mentorship
  • Certification(s) to responsibly work in and create a safe and clean environment for food production and consumption (ie: State Specific Food Handlers Card) is a bonus
  • Flexibility to work evenings, weekends, and holidays as required
  • The ability to legally work in the USA

Job Duties

  • Develop your culinary skills and create food you’re proud of, whether you’re new to the kitchen or experienced
  • Uphold Earls’ standards through exceptional food production, ensuring consistent quality control and safety
  • Foster team collaboration by contributing to a connected and committed kitchen environment
  • Take responsibility for the cleanliness and safety of your station, maintaining high kitchen standards
  • Express your passion for hospitality through excellent execution, product knowledge, and a commitment to the guest experience
  • Prepare high-quality sushi dishes, including nigiri, sashimi, rolls, and specialty items, ensuring top-tier presentation and taste
  • Manage the sushi station, maintaining cleanliness, organization, and adherence to health and safety standards
  • Collaborate with kitchen staff and management to refine menu offerings and introduce new ideas
  • Monitor sushi ingredients, ensuring freshness and minimizing waste
  • Train and mentor junior kitchen staff as needed
