Job Requirements
- High school diploma or equivalent
- 1-3 years of relevant sushi chef experience preferred
- Valid Washington Food Handler Certification or ability to obtain
- Ability to stand for extended periods
- Ability to lift up to 30 pounds
- Flexibility to work evenings, weekends, and holidays
- Strong attention to detail and cleanliness
Job Qualifications
- 1-3 years of sushi preparation experience preferred
- Strong knife skills and familiarity with sushi preparation techniques
- Ability to work quickly, cleanly, and consistently under pressure
- Positive attitude and excellent communication with team members
- Washington Food Handler Certification or ability to obtain shortly after hire
- Flexible availability including evenings, weekends, and holidays
Job Duties
- Prepare sushi rolls, nigiri, sashimi, and other menu items to company specifications
- Maintain ingredient freshness, proper storage, and accurate FIFO rotation
- Keep a clean, organized, and sanitized workstation throughout service
- Follow all food safety practices and Washington food handling regulations
- Collaborate with the kitchen and front-of-house teams to support smooth service
- Assist with daily prep, inventory checks, and restocking needs
- Demonstrate and uphold all TRAPCHK values: teamwork, respect, accountability, passion, honesty, and kindness
