Job Requirements

  • Standing for extended periods in a fast-paced kitchen environment
  • Lifting up to 30 pounds (ingredients, containers, equipment)
  • Repetitive motions including chopping, rolling, and plating

Job Qualifications

  • 1-3 years of sushi preparation experience preferred
  • Strong knife skills and familiarity with sushi preparation techniques
  • Ability to work quickly, cleanly, and consistently under pressure
  • Positive attitude and excellent communication with team members
  • Washington Food Handler Certification or ability to obtain shortly after hire
  • Flexible availability including evenings, weekends, and holidays

Job Duties

  • Prepare sushi rolls, nigiri, sashimi, and other menu items to company specifications
  • Maintain ingredient freshness, proper storage, and accurate FIFO rotation
  • Keep a clean, organized, and sanitized workstation throughout service
  • Follow all food safety practices and Washington food handling regulations
  • Collaborate with the kitchen and front-of-house teams to support smooth service
  • Assist with daily prep, inventory checks, and restocking needs
  • Demonstrate and uphold all TRAPCHK values: teamwork, respect, accountability, passion, honesty, and kindness
