Job Requirements

  • High school diploma or equivalent preferred
  • minimum three years of sushi-making experience
  • knowledge of Japanese cuisine
  • strong communication skills
  • ability to maintain professional demeanor
  • capable of following detailed recipes and preparation instructions
  • experience in inventory management
  • ability to work shifts including day and night
  • physical ability to stand for long periods
  • skill in handling knives and seafood
  • capacity to lift up to 65 lbs

  • adherence to health and safety regulations

Job Qualifications

Job Duties

  • Ensure quality of food by preparing items accurately and to the highest standards
  • know the menu thoroughly and properly
  • minimize waste of food and kitchen items
  • skillfully clean and filet fish
  • make and prepare nigiri, handrolls, sashimi, and other food items
  • prepare sushi rice by washing, cooking, cutting, and handling according to specific recipes
  • oversee inventory and supplier order accuracy including ordering appropriate amounts of fish
  • contribute to kitchen personnel training
  • perform side job duties such as cleaning workstations before, during, and after shifts
  • abide by all federal, state, and local labor health and safety laws
