Job Requirements
- High school diploma or equivalent preferred
- minimum three years of sushi-making experience
- knowledge of Japanese cuisine
- strong communication skills
- ability to maintain professional demeanor
- capable of following detailed recipes and preparation instructions
- experience in inventory management
- ability to work shifts including day and night
- physical ability to stand for long periods
- skill in handling knives and seafood
- capacity to lift up to 65 lbs

Job Qualifications

Job Duties
- Ensure quality of food by preparing items accurately and to the highest standards
- know the menu thoroughly and properly
- minimize waste of food and kitchen items
- skillfully clean and filet fish
- make and prepare nigiri, handrolls, sashimi, and other food items
- prepare sushi rice by washing, cooking, cutting, and handling according to specific recipes
- oversee inventory and supplier order accuracy including ordering appropriate amounts of fish
- contribute to kitchen personnel training
- perform side job duties such as cleaning workstations before, during, and after shifts
- abide by all federal, state, and local labor health and safety laws
