Job Duties
- Greet and welcome guests upon arrival to the sushi bar/lounge area
- Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking using kitchen equipment including broilers, ovens, grills, and fryers
- Respond promptly and courteously to guest requests and provide information about food
- Ensure guests are satisfied with food quality and service
- Perform shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
- Comply with company standards on food portioning, cooking methods, quality standards, kitchen recipes, safety and sanitation standards, policies, and procedures
- Maintain kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units and food storage areas clean, sanitary, and organized
- Report any kitchen/sushi equipment or maintenance issues to the manager on duty and head sushi chef
- Adhere to company guidelines on proper food presentation and garnishes
- Properly handle ready to eat food served raw
- Handle, store, label, and rotate foods properly and in accordance with public health safety, state, and local laws
- Follow Ecosure best practices for food handling and storage
- Use knives, hand tools, utensils, and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze or otherwise produce food
- Keep head sushi chef informed of inventories and report defective products or equipment issues
- Present a clean and neat appearance and use a courteous manner with all guests
- Notify manager on duty when guests are not satisfied or if an accident occurs
- Adhere to company guidelines on alcoholic beverage service
- Assist with sushi item preparation and sushi helpers as required
- Participate in ensuring guest special occasion celebrations are memorable
- May be asked to photograph or be photographed with guests upon request
- Perform other duties as assigned by supervisor
