- food handler’s certification
- ability to work calmly and efficiently in a high-pressure, fast-paced environment
- clear communication and collaboration skills within a kitchen team
- familiarity with seafood safety regulations
Job Qualifications

- deep knowledge of seasonal fish, sourcing, and traditional Japanese preparation techniques
- mastery of knife handling, fish fabrication, and precision slicing

Job Duties
- Prepare traditional and modern nigiri and sashimi with precision, speed, and artistry
- break down, clean, and portion whole fish with expertise and care
- maintain strict control over fish quality, freshness, and inventory rotation (FIFO)
- ensure all plates are presented with clean, precise cuts and proper garnishes
- work closely with the Sushi Bar Manager and team to ensure smooth and efficient service
- assist in daily prep, including butchering, marinating, seasoning, and sauce making
- adhere to and uphold the highest standards of sanitation and food safety protocols in accordance with state and local health codes
- educate and mentor junior team members in proper techniques and station maintenance
- interact with guests at the sushi bar when appropriate, offering insight and hospitality
