Job Requirements

  • Minimum 4 years of hands-on experience preparing nigiri and sashimi in a professional sushi kitchen
  • food handler’s certification
  • ability to work calmly and efficiently in a high-pressure, fast-paced environment
  • clear communication and collaboration skills within a kitchen team
  • familiarity with seafood safety regulations

Job Qualifications

  • Minimum 4 years of hands-on experience preparing nigiri and sashimi in a professional sushi kitchen
  • deep knowledge of seasonal fish, sourcing, and traditional Japanese preparation techniques
  • mastery of knife handling, fish fabrication, and precision slicing
  • strong attention to detail, flavor balance, and plating aesthetics
  • ability to work calmly and efficiently in a high-pressure, fast-paced environment
  • clear communication and collaboration skills within a kitchen team
  • familiarity with seafood safety regulations
  • food handler’s certification

Job Duties

  • Prepare traditional and modern nigiri and sashimi with precision, speed, and artistry
  • break down, clean, and portion whole fish with expertise and care
  • maintain strict control over fish quality, freshness, and inventory rotation (FIFO)
  • ensure all plates are presented with clean, precise cuts and proper garnishes
  • work closely with the Sushi Bar Manager and team to ensure smooth and efficient service
  • assist in daily prep, including butchering, marinating, seasoning, and sauce making
  • adhere to and uphold the highest standards of sanitation and food safety protocols in accordance with state and local health codes
  • educate and mentor junior team members in proper techniques and station maintenance
  • interact with guests at the sushi bar when appropriate, offering insight and hospitality
