Job Requirements

Job Qualifications

  • Culinary degree or certificate strongly preferred
  • At least five years of culinary experience in high-end sushi restaurants such as Nobu, Zuma, Masa, Sushi Samba
  • Prior culinary leadership experience in high-end restaurants, resorts, or private clubs preferred
  • Experience with a wide range of culinary skills and styles
  • Extensive knowledge of sushi preparation techniques
  • Experience sourcing local ingredients and creating seasonal menu items
  • Exceptional attention to detail, quality, taste, and service
  • Knowledge of local and imported food products
  • Understanding of food and beverage operational requirements
  • Thorough knowledge of occupational health and safety issues

Job Duties

  • Create and oversee daily operating procedures for sushi menu execution in accordance with business objectives
  • Ensure highest quality and presentation of sushi items through regular spot checks
  • Recommend and create new menu items based on research of local trends and member requests
  • Hire, schedule, train, coach, mentor, and manage culinary employees
  • Schedule sushi staff to optimize labor costs relative to business volume
  • Train employees on sushi menu standards for consistent execution
  • Anticipate business levels to properly schedule, inventory, and prepare for service
  • Control quality and quantity of ingredients to maximize profitability
  • Collaborate with senior chefs to minimize waste and spoilage
  • Recommend menu pricing adjustments as needed
  • Work closely with stewarding staff to maintain a clean and orderly kitchen
  • Supervise culinary employees to ensure completion of cleaning schedules and safety protocols
  • Champion a clean and safe work environment adhering to all food safety standards
  • Maintain food safety management system including HACCP
  • Oversee maintenance of kitchen equipment to prevent damage or loss
  • Assist with member or guest issues professionally
  • Attend department meetings and training sessions
