Job Duties

  • Execute sushi, sashimi, and related preparations with precision and consistency
  • Demonstrate expert knowledge of fish breakdown, treatment, storage, and utilization
  • Maintain exacting standards for knife work, rice preparation, portioning, and presentation
  • Uphold recipe integrity while contributing to menu development
  • Ensure quality, temperature, and visual refinement meet brand standards
  • Perform confidently in a highly guest-facing sushi counter environment
  • Engage guests with professionalism while maintaining execution focus
  • Coordinate with front-of-house teams on pacing, allergies, and special requests
  • Contribute to a seamless and elevated dining experience
  • Support ordering and management of premium ingredients, including imported products
  • Maintain accurate station inventory and mise en place
  • Minimize waste through disciplined prep and storage
  • Follow all written procedures with consistency
  • Lead by example with professionalism and discipline
  • Support training and development of junior team members
  • Provide constructive feedback and support positive team culture
  • Uphold standards for grooming, punctuality, and cleanliness
  • Adhere to all food safety and sanitation standards
  • Maintain clean, organized workstations
