- Must successfully pass the companys sushi chef training program and cooking procedures
- previous experience as sushi chef highly desirable

Job Duties
- Greet and welcome guests upon arrival to the sushi bar lounge area
- prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking using various kitchen equipment
- respond promptly and courteously to guest requests and provide information about food
- ensure guests are satisfied with food quality and service
- perform shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
- comply with company standards on food portioning, cooking methods, quality standards, kitchen recipes, safety and sanitation standards, policies, and procedures
- maintain cleanliness and organization of kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units, and food storage areas
- report kitchen or sushi equipment and maintenance issues to the manager on duty and head sushi chef
- adhere to guidelines on proper food presentation and garnishes
- handle ready to eat raw food properly
- properly store, label, and rotate foods according to public health safety and laws
- follow Ecosure best practices for food handling and storage
- use knives, hand tools, utensils, and equipment to produce food for dining room, sushi lounge, and bar
- keep head sushi chef informed of inventories and report any defective products or equipment
- present a clean and neat appearance and courteous manner with guests
- notify MOD immediately when guests are dissatisfied or if accidents occur
- adhere to company guidelines on alcoholic beverage service
- assist with preparation of sushi items and helpers as required
- participate in ensuring guest special occasion celebrations are memorable
- photograph or be photographed with guests when requested
- perform other duties as assigned by supervisor
