Job Requirements

  • Must successfully pass the companys sushi chef training program and cooking procedures
  • previous experience as sushi chef highly desirable
  • culinary degree a plus
  • approved food handling training as required by local laws

Job Duties

  • Greet and welcome guests upon arrival to the sushi bar lounge area
  • prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking using various kitchen equipment
  • respond promptly and courteously to guest requests and provide information about food
  • ensure guests are satisfied with food quality and service
  • perform shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
  • comply with company standards on food portioning, cooking methods, quality standards, kitchen recipes, safety and sanitation standards, policies, and procedures
  • maintain cleanliness and organization of kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units, and food storage areas
  • report kitchen or sushi equipment and maintenance issues to the manager on duty and head sushi chef
  • adhere to guidelines on proper food presentation and garnishes
  • handle ready to eat raw food properly
  • properly store, label, and rotate foods according to public health safety and laws
  • follow Ecosure best practices for food handling and storage
  • use knives, hand tools, utensils, and equipment to produce food for dining room, sushi lounge, and bar
  • keep head sushi chef informed of inventories and report any defective products or equipment
  • present a clean and neat appearance and courteous manner with guests
  • notify MOD immediately when guests are dissatisfied or if accidents occur
  • adhere to company guidelines on alcoholic beverage service
  • assist with preparation of sushi items and helpers as required
  • participate in ensuring guest special occasion celebrations are memorable
  • photograph or be photographed with guests when requested
  • perform other duties as assigned by supervisor
