Job Requirements

  • must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency
  • must be able to obtain and maintain a Washington State health card (food worker card)
  • SERVSAFE certified preferred
  • must have and maintain a Washington State driver’s license
  • must be able to be insured according to our driving insurance policy

Job Qualifications

  • exceptional guest service skills required
  • minimum 10 years of experience as a sushi chef
  • must be knowledgeable in state guidelines for food safety, sanitation and preparation
  • exemplary knife skills are required
  • minimum 10 years of experience with fish butchery
  • comfortability with butchering most seafood items
  • intimate knowledge of sushi rice preparation
  • extensive knowledge of all variations of sushi preparation, including but not limited to nigiri, sashimi, maki, uramaki, temaki

Job Duties

  • maintains a high level of guest satisfaction and quality standards
  • observe that each order sent out is meeting established standards, correcting as needed
  • ensures availability of supplies or approved substitutions in adequate time for preparation
  • supervises, delegates, and coordinates the activities of other workers engaged in prepping, cooking, or serving guests
  • cook and otherwise prepare food according to recipes
  • assist all staff as needed
  • source the highest quality products in conjunction with the Purchasing department
  • continually reviews kitchen operations for improvements in all areas
  • follows all food safety, sanitation, and HACCP guidelines as applicable
  • works days, nights, weekends, special events and holidays as needed
  • write a sushi menu which is properly costed out and approved by management
  • maintain flexibility with your schedule and comfortable with a changing environment
  • performs other duties as assigned
