Job Requirements

Job Qualifications
- Culinary degree or certificate strongly preferred
- At least five years of culinary experience in high-end sushi restaurants
- Prior culinary leadership experience in upscale restaurants, resorts, or private clubs preferred
- Extensive knowledge of sushi preparation
- Experience sourcing local and seasonal ingredients
- Strong attention to detail, quality, taste, and service
- Comprehensive knowledge of food products both local and imported
- Understanding of food and beverage operational requirements
- Thorough awareness of occupational health and safety standards
Job Duties
- Create and oversee daily operating procedures for sushi menu execution in line with business objectives
- Ensure the highest quality of food presentation and taste through regular spot checks
- Recommend and develop new menu items based on local product trends and member requests
- Hire, schedule, train, coach, mentor, and manage culinary employees
- Schedule work hours considering business volume and labor cost efficiency
- Train employees on sushi menu standards to ensure consistent execution
- Control ingredient quality and quantity, suggest modifications to improve profitability
- Collaborate closely with Senior Chefs on ingredient use and waste reduction
- Discuss and recommend menu price adjustments with Senior Chefs
- Coordinate with Stewarding to maintain kitchen cleanliness and order
- Supervise culinary employees to ensure completion of cleaning schedules and checklists
- Champion a clean and safe work environment adhering to food safety standards
- Ensure compliance with HACCP and local food safety regulations
- Monitor maintenance of kitchen equipment and prevent property loss or damage
- Assist with member or guest issues professionally
- Attend department meetings and trainings as required
