Job Requirements

  • Professional sushi chef experience at senior or lead level
  • Proven ability in executing omakase-level sushi
  • Strong knife skills and knowledge of fish fabrication and rice preparation
  • Ability to perform confidently in a high-pressure environment
  • Excellent communication and leadership skills
  • Flexibility to commit for approximately 60 days
  • Availability for full-time temporary engagement

  • Proven omakase-level execution and deep product knowledge
  • Ability to step in quickly and perform at a high standard
  • Experience in omakase or chef-counter concepts
  • Familiarity with sake styles and pairing philosophy
  • Comfort in guest-interactive, brand-forward environments

Job Duties

  • Execute omakase-level sushi, sashimi, and nigiri with precision and consistency
  • Demonstrate advanced knife skills, fish fabrication, curing, aging, and rice mastery
  • Uphold Japanese technique aligned with Sake a Gogo's modern presentation
  • Maintain exceptional cleanliness, organization, and station discipline
  • Lead by example with calm authority, professionalism, and strong work ethic
  • Support and stabilize the sushi team during the transition period
  • Foster a respectful, disciplined, team-oriented kitchen culture
  • Work seamlessly with front-of-house, bar, and leadership teams
  • Engage guests warmly and confidently at the sushi bar
  • Educate on fish sourcing, preparation, omakase flow, and sake pairings
  • Represent Sake a Gogo and Belle Noble Hospitality Group with polish and integrity
  • Participate comfortably in limited guest-facing or social moments when appropriate
