Job Requirements
- Professional sushi chef experience at senior or lead level
- Proven ability in executing omakase-level sushi
- Strong knife skills and knowledge of fish fabrication and rice preparation
- Ability to perform confidently in a high-pressure environment
- Excellent communication and leadership skills
- Flexibility to commit for approximately 60 days
- Availability for full-time temporary engagement

- Experience in omakase or chef-counter concepts

Job Duties
- Execute omakase-level sushi, sashimi, and nigiri with precision and consistency
- Demonstrate advanced knife skills, fish fabrication, curing, aging, and rice mastery
- Uphold Japanese technique aligned with Sake a Gogo's modern presentation
- Maintain exceptional cleanliness, organization, and station discipline
- Lead by example with calm authority, professionalism, and strong work ethic
- Support and stabilize the sushi team during the transition period
- Foster a respectful, disciplined, team-oriented kitchen culture
- Work seamlessly with front-of-house, bar, and leadership teams
- Engage guests warmly and confidently at the sushi bar
- Educate on fish sourcing, preparation, omakase flow, and sake pairings
- Represent Sake a Gogo and Belle Noble Hospitality Group with polish and integrity
- Participate comfortably in limited guest-facing or social moments when appropriate
