Job Requirements

  • Minimum high school diploma or equivalent
  • 2-3 years of relevant sushi preparation experience
  • proven knife skills and knowledge of Japanese ingredients
  • ability to work full schedule including weekends, holidays, and split shifts
  • legal authorization to work in the United States
  • physical ability to stand for long periods
  • ability to lift up to 30 pounds
  • capacity to work in high-heat fast-paced kitchen
  • dexterity for repetitive hand motions and fine tool handling

Job Qualifications

  • Minimum 2-3 years of experience in high-volume sushi preparation preferably in luxury or Michelin-starred Japanese restaurants
  • proven knife skills with precision slicing and sushi rice preparation
  • in-depth knowledge of sushi-making techniques and seafood handling
  • strong work ethic and ability to work under pressure
  • excellent teamwork, time management, and communication skills
  • culinary education or formal sushi training is a plus
  • legal authorization to work in the United States

Job Duties

  • Expertly prepare sushi and sashimi including nigiri and maki rolls with precision and presentation standards
  • maintain consistent portion sizes and cutting techniques
  • ensure freshness and proper handling of raw fish and ingredients
  • monitor mise en place levels and keep sushi bar stocked
  • adhere to food safety and sanitation standards including HAACP practices
  • maintain clean and organized workstation
  • ensure safe storage and labeling of ingredients with FIFO practices
  • assist in daily and weekly deep cleaning protocols
  • work closely with Head Sushi Chef and Sous Chefs to ensure smooth operations
  • mentor and guide junior sushi cooks and commis chefs
  • communicate effectively with front-of-house staff
  • contribute to prep lists and inventory control
  • execute core sushi offerings with precision
  • contribute to seasonal specials and omakase experiences
  • stay updated with culinary trends in Japanese cuisine
