- Must successfully pass the Company’s sushi chef training program and cooking procedures
- previous experience as sushi chef highly desirable
- culinary degree a plus

Job Duties
- Greets and welcomes guests upon arrival to the sushi bar/lounge area
- prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking using various kitchen equipment
- responds promptly and courteously to guest requests and provides information about food
- ensures guests are satisfied with food quality and service
- performs shift opening and closing duties including cleaning sushi bar area and equipment
- maintains standards on food portioning, cooking methods, quality, safety and sanitation
- keeps kitchen, sushi counters, equipment and food storage clean and organized
- reports kitchen/sushi equipment or maintenance issues
- adheres to proper food presentation and garnish guidelines
- handles ready-to-eat food safely
- follows food handling and storage best practices
- uses knives and tools for food preparation
- keeps Head Sushi Chef informed of inventories and product issues
- presents a clean appearance and courteous manner
- notifies manager on duty of guest dissatisfaction or accidents
- adheres to guidelines on alcoholic beverage service
- assists with sushi item preparation and staff support
- participates in guest special occasion celebrations
- may photograph or be photographed with guests when requested
- performs other duties as assigned
