Job Requirements

  • Must successfully pass the companys sushi chef training program and cooking procedures
  • Previous experience as sushi chef highly desirable
  • Culinary degree a plus
  • Approved food handling training as required by local laws

Job Duties

  • Greet and welcome guests upon arrival to the sushi bar or lounge area
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment including broilers, ovens, grills, and fryers
  • Respond promptly and courteously to guest requests and provide information about food
  • Ensure guests are satisfied with food quality and service
  • Perform shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
  • Maintain cleanliness and sanitation of the sushi bar, kitchen areas, equipment, refrigeration units, and food storage
  • Report any equipment or maintenance issues to the manager on duty and head sushi chef
  • Adhere to company guidelines on food portioning, cooking methods, presentation, garnishes, and safety standards
  • Handle ready to eat raw foods properly
  • Store, label, and rotate foods in accordance with public health and safety laws
  • Use knives and kitchen utensils to prepare food items
  • Assist with preparation of sushi items and support sushi helpers as required
  • Participate in ensuring guest special occasion celebrations are memorable
  • Follow company guidelines on alcoholic beverage service
  • Maintain a clean and neat appearance and use courteous manners with guests
  • Immediately notify management when guests are not satisfied or if an accident occurs
  • Perform other duties as assigned by the supervisor
