Job Requirements
- High school diploma or equivalent
- at least 1-2 years of professional experience in sushi preparation
- knowledge of Japanese culinary traditions and sushi techniques
- ability to work flexible hours including evenings and weekends
- commitment to food safety and hygiene standards
- good physical stamina and manual dexterity
- excellent communication skills and ability to work in a team
Job Qualifications
- At least 1-2 years of experience as a sushi cook or in a similar culinary role, preferably in a high-volume environment
- strong understanding of sushi techniques, knife skills, and ingredient sourcing
- familiarity with Japanese cuisine and food preparation methods
- ability to work efficiently under pressure, multitask, and maintain attention to detail
- excellent communication and teamwork skills
- food safety certification if required by local health codes and/or sushi-specific training is a plus
Job Duties
- Prepare and assemble sushi, sashimi, rolls, and other Japanese dishes according to restaurant recipes and standards
- ensure the freshness, quality, and proper storage of all ingredients including fish, rice, seaweed, and vegetables
- create visually appealing sushi plates, garnishing dishes with attention to detail
- stay updated on menu items, specials, and seasonal ingredients and be able to describe them to guests
- follow all food safety guidelines including proper handling, storage, and sanitation practices
- always maintain a clean and organized workstation including proper disposal of waste and cleaning of tools and equipment
- work closely with other kitchen staff including line cooks and kitchen managers to ensure efficient kitchen operations
- occasionally interact with guests at the sushi bar providing information on menu items and addressing special requests
