Job Requirements

  • High school diploma or equivalent
  • at least 1-2 years of professional experience in sushi preparation
  • knowledge of Japanese culinary traditions and sushi techniques
  • ability to work flexible hours including evenings and weekends
  • commitment to food safety and hygiene standards
  • good physical stamina and manual dexterity
  • excellent communication skills and ability to work in a team

Job Qualifications

  • At least 1-2 years of experience as a sushi cook or in a similar culinary role, preferably in a high-volume environment
  • strong understanding of sushi techniques, knife skills, and ingredient sourcing
  • familiarity with Japanese cuisine and food preparation methods
  • ability to work efficiently under pressure, multitask, and maintain attention to detail
  • excellent communication and teamwork skills
  • food safety certification if required by local health codes and/or sushi-specific training is a plus

Job Duties

  • Prepare and assemble sushi, sashimi, rolls, and other Japanese dishes according to restaurant recipes and standards
  • ensure the freshness, quality, and proper storage of all ingredients including fish, rice, seaweed, and vegetables
  • create visually appealing sushi plates, garnishing dishes with attention to detail
  • stay updated on menu items, specials, and seasonal ingredients and be able to describe them to guests
  • follow all food safety guidelines including proper handling, storage, and sanitation practices
  • always maintain a clean and organized workstation including proper disposal of waste and cleaning of tools and equipment
  • work closely with other kitchen staff including line cooks and kitchen managers to ensure efficient kitchen operations
  • occasionally interact with guests at the sushi bar providing information on menu items and addressing special requests
