Job Duties

  • Greets and welcomes guests upon arrival to the sushi bar/lounge area
  • prepares a variety of meats, seafood, poultry, vegetables, and other food items for cooking using kitchen equipment
  • responds promptly and courteously to guest requests and provides information about food
  • ensures guests are satisfied with food quality and service
  • performs shift opening and closing duties including cleaning sushi bar equipment and floors
  • complies with company standards on food portioning, cooking methods, quality, safety, sanitation, policies, and procedures
  • maintains cleanliness and organization of kitchen, sushi counters, equipment, refrigeration units, and food storage areas
  • reports equipment or maintenance issues to manager on duty and head sushi chef
  • adheres to food presentation and garnishing guidelines
  • properly handles ready-to-eat raw food
  • stores, labels, and rotates foods according to public health, state, and local laws
  • follows Ecosure Best Practices for food handling and storage
  • uses knives and hand tools to prepare food items
  • keeps head sushi chef informed of inventory levels and product or equipment issues
  • presents a clean, neat appearance and courteous manner
  • notifies manager on duty of any guest dissatisfaction or accidents
  • adheres to alcoholic beverage service guidelines
  • assists with preparation of sushi items and helps as needed
  • participates in guest celebrations
  • may be photographed with guests upon request
  • performs other duties as assigned by supervisor
