Job Requirements
- Minimum 3 years of experience in sushi preparation
- knowledge of food safety and sanitation standards
- high school diploma required
- culinary certification preferred
- ability to work flexible hours including weekends and holidays
- able to stand for extended periods
- physical ability to lift up to 50 pounds and push 200-pound carts

Job Duties
- Prepare sushi and sashimi dishes according to standardized recipes and presentation guidelines
- ensure proper storage, rotation, and labeling of all sushi ingredients
- maintain cleanliness and sanitation of the sushi station and equipment
- monitor inventory and assist with ordering and receiving supplies
- train and mentor junior kitchen staff in sushi preparation techniques
- collaborate with culinary leadership on menu development and seasonal offerings
- adhere to food safety and sanitation regulations at all times
- provide personable service to guests when applicable
- report equipment maintenance needs and ensure proper functioning of tools
- participate in kitchen opening and closing procedures
- support cost control measures and minimize waste
- attend required hotel meetings and training sessions
- perform other duties as assigned
