Job Requirements

  • Minimum 3 years of experience in sushi preparation
  • knowledge of food safety and sanitation standards
  • high school diploma required
  • culinary certification preferred
  • ability to work flexible hours including weekends and holidays
  • able to stand for extended periods
  • physical ability to lift up to 50 pounds and push 200-pound carts

Job Qualifications

  • strong knowledge of sushi techniques, food safety standards, and kitchen operations
  • ability to bend, stoop, stand, lift up to 50 pounds, and push carts up to 200 pounds
  • ability to work flexible schedules including weekends and holidays
  • high school diploma required
  • culinary certification preferred

Job Duties

  • Prepare sushi and sashimi dishes according to standardized recipes and presentation guidelines
  • ensure proper storage, rotation, and labeling of all sushi ingredients
  • maintain cleanliness and sanitation of the sushi station and equipment
  • monitor inventory and assist with ordering and receiving supplies
  • train and mentor junior kitchen staff in sushi preparation techniques
  • collaborate with culinary leadership on menu development and seasonal offerings
  • adhere to food safety and sanitation regulations at all times
  • provide personable service to guests when applicable
  • report equipment maintenance needs and ensure proper functioning of tools
  • participate in kitchen opening and closing procedures
  • support cost control measures and minimize waste
  • attend required hotel meetings and training sessions
  • perform other duties as assigned
