Job Requirements
- Must successfully pass the company’s sushi chef training program and cooking procedures
- Previous experience as sushi chef preferred
- Culinary degree is a plus
- Approved food handling training as required by local laws
- Ability to maintain cleanliness and sanitation standards
- Strong interpersonal skills and ability to work in a team
- Capacity to comply with health and safety regulations
- Willingness to perform opening and closing duties
- Must be able to handle food safely including raw items
Job Qualifications
- Previous experience as sushi chef highly desirable
- Culinary degree a plus
- Approved food handling training as required by local laws
- Familiarity with sushi preparation and Japanese cuisine
- Strong customer service and communication skills
- Ability to work in a fast-paced, guest-focused environment
- Knowledge of food safety and sanitation standards
Job Duties
- Greets and welcomes guests upon arrival to the sushi bar or lounge area
- Prepares a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment including broilers, ovens, grills, and fryers
- Responds promptly and courteously to guest requests and provides information about food
- Ensures guests are satisfied with food quality and service
- Performs shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
- Complies with company standards on food portioning, cooking methods, quality standards, kitchen recipes, safety and sanitation standards, policies, and procedures
- Maintains cleanliness and organization of kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units and food storage areas
- Reports kitchen or sushi equipment and maintenance issues to manager on duty and head sushi chef
- Adheres to guidelines on proper food presentation and garnishes
- Properly handles ready-to-eat foods served raw
- Handles, stores, labels, and rotates foods in accordance with health and safety laws
- Follows Ecosure best practices for food handling and storage
- Uses knives, hand tools, and kitchen equipment to prepare foods
- Keeps head sushi chef informed of inventories and reports defective products or equipment
- Presents a clean and neat appearance
- Notifies manager on duty of guest dissatisfaction or accidents
- Adheres to company guidelines on alcoholic beverage service
- Assists with preparation of sushi items and helpers as required
- Participates in ensuring memorable guest special occasion celebrations
- May be photographed with guests upon company request
- Performs other duties as assigned by supervisor
