Job Requirements

  • Must successfully pass the company’s sushi chef training program and cooking procedures
  • Previous experience as sushi chef preferred
  • Culinary degree is a plus
  • Approved food handling training as required by local laws
  • Ability to maintain cleanliness and sanitation standards
  • Strong interpersonal skills and ability to work in a team
  • Capacity to comply with health and safety regulations
  • Willingness to perform opening and closing duties
  • Must be able to handle food safely including raw items

Job Qualifications

  • Previous experience as sushi chef highly desirable
  • Culinary degree a plus
  • Approved food handling training as required by local laws
  • Familiarity with sushi preparation and Japanese cuisine
  • Strong customer service and communication skills
  • Ability to work in a fast-paced, guest-focused environment
  • Knowledge of food safety and sanitation standards

Job Duties

  • Greets and welcomes guests upon arrival to the sushi bar or lounge area
  • Prepares a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment including broilers, ovens, grills, and fryers
  • Responds promptly and courteously to guest requests and provides information about food
  • Ensures guests are satisfied with food quality and service
  • Performs shift opening and closing duties including cleaning neta cases, cutting boards, equipment, and floors
  • Complies with company standards on food portioning, cooking methods, quality standards, kitchen recipes, safety and sanitation standards, policies, and procedures
  • Maintains cleanliness and organization of kitchen, cooking areas, sushi counters, kitchen equipment, refrigeration units and food storage areas
  • Reports kitchen or sushi equipment and maintenance issues to manager on duty and head sushi chef
  • Adheres to guidelines on proper food presentation and garnishes
  • Properly handles ready-to-eat foods served raw
  • Handles, stores, labels, and rotates foods in accordance with health and safety laws
  • Follows Ecosure best practices for food handling and storage
  • Uses knives, hand tools, and kitchen equipment to prepare foods
  • Keeps head sushi chef informed of inventories and reports defective products or equipment
  • Presents a clean and neat appearance
  • Notifies manager on duty of guest dissatisfaction or accidents
  • Adheres to company guidelines on alcoholic beverage service
  • Assists with preparation of sushi items and helpers as required
  • Participates in ensuring memorable guest special occasion celebrations
  • May be photographed with guests upon company request
  • Performs other duties as assigned by supervisor
