Job Requirements

  • High school diploma or GED preferred
  • certification through local City Health Department preferred
  • certified through Texas Association for School Nutrition preferred
  • knowledge of methods, materials, equipment, and appliances used in food preparation
  • good personal work habits
  • knowledge and certification in HACCP sanitation and safety practices
  • able to read and understand production records and follow them
  • able to read and understand recipes and follow them
  • able to convert recipes using basic math skills
  • completion of sanitation and safety courses preferred
  • experience in institutional food service operations preferred

Job Duties

  • Support the department with regular attendance and punctuality
  • show high initiative and self-motivation
  • maintain an organized and clean workspace
  • swipe in and out every day
  • verify time swipes weekly and send changes in writing to the secretary
  • maintain knowledge of and operate kitchen equipment including electric slicers, mixers, pressure steamers, kettles, ovens, and dishwashers
  • notify kitchen manager of equipment in need of repair
  • maintain a clean kitchen at all times using clean as you go techniques
  • demonstrate good personal appearance and cleanliness
  • follow proper hygiene and safety procedures
  • document food item temperatures and record on HACCP logs
  • take daily food samples, label and store them properly
  • store all food items according to HACCP principles
  • maintain a safe work environment with on-the-spot corrections
  • maintain serving schedules and ensure menu items are ready for meal times
  • prepare meal components in correct quantities following menu specifications and USDA, TDA regulations
  • attend daily staff meetings to understand duties and updates
  • communicate product usage with manager
  • assist with receiving and storing products, including proper dating and stock rotation
  • record refrigeration temperatures twice daily
  • input cashier deposits daily
  • perform other functions as assigned by administration or supervisor
