Job Requirements

  • Physical ability to stand, walk, bend, stoop, reach and twist frequently
  • Ability to lift up to 40lbs and move 50lbs continuously during shifts
  • Ability to operate and clean kitchen equipment including rice washer, mandolin slicer, meat grinder, sushi robot, fryer, gas appliances, and dishwasher
  • Ability to operate and clean restaurant equipment including POS systems, cash registers, ordering tablets, beverage fountains, and miso soup dispensers
  • Must have excellent knife handling skills
  • Must have basic cooking techniques and standards
  • Able to work flexible AM/PM shifts including weekends and holidays
  • Neat, clean and well-groomed appearance
  • Highly motivated with the ability to follow directions quickly and accurately
  • Able to transfer locations as needed
  • Must be able to regulate cost of goods and labor within budget goals

Job Qualifications

  • Three years of back of house experience in a food service operation including food preparation and cooking
  • At least two years of management or supervisory experience
  • Certification for safe food handling from ServeSafe or HI DOH
  • Ability to serve alcohol in applicable stores
  • Tuberculosis clearance (Hawaii only)
  • Food Handlers Card (Washington only)
  • Proficient in Windows-based software including Word, Excel, and Outlook
  • Proven record of effective management
  • Strong communication skills
  • Knowledge of OSHA, food sanitation and safety programs
  • Knowledge of alcohol service laws where applicable
  • Ability to manage and motivate a team
  • Organized and able to maintain cleanliness
  • Ability to memorize and promote menu items

Job Duties

  • Maintain and ensure the restaurant complies with federal and state OSHA and sanitation/food safety programs
  • Ensure ongoing operation and correction of safety hazards in the restaurant
  • Maintain a clean and organized restaurant interior and exterior
  • Implement and update policies and procedures as set by management
  • Learn and become proficient in all FOH/BOH and management duties
  • Communicate and report operational issues to the operations team regularly
  • Enforce company policies and procedures
  • Ensure customer service standards are trained, practiced, and enforced
  • Manage customer complaints and report to Head Office
  • Interview potential candidates and follow hiring processes
  • Oversee work schedules for FOH and BOH
  • Monitor and control costs for supplies, utilities, and staff uniforms
  • Perform employee performance evaluations
  • Lead staff through operational and procedural changes
  • Monitor food preparation and kitchen operations to company standards
  • Ensure proper sanitation and handwashing compliance
  • Control food quantities based on sales volume
  • Oversee inventory control and product rotation
  • Ensure compliance with refrigeration and food safety standards
  • Train and monitor staff on food safety and allergy awareness
  • Maintain POS system operations and cash handling procedures
  • Submit reports and invoices to Head Office
  • Attend bi-monthly management meetings
  • Perform other duties as assigned by the company
