Job Requirements

  • Must be at least 21 years of age
  • High School Diploma
  • Minimum three years management experience in high volume banquet or food service
  • Advanced knowledge of kitchen operations and equipment
  • Knowledge of health and safety regulations
  • Basic computer skills
  • Ability to work flexible schedules including nights, weekends, and holidays
  • Strong leadership and communication skills
  • Physical ability to lift up to 50 pounds and perform manual tasks
  • Ability to work in a fast-paced environment
  • Compliance with federal and state licensing requirements

Job Qualifications

  • High School Diploma
  • Minimum three years experience managing high volume, multi-unit hotel, banquet, or food service establishment
  • Proven record of success in executing and improving results
  • Advanced knowledge of kitchen operations and F&B equipment
  • Knowledge of commercial kitchen equipment
  • Experience with inventory controls and procurement preferred
  • Understanding of Union Labor Law and collective bargaining agreements
  • Comprehensive knowledge of safe and sanitary food handling
  • Familiarity with cleaning chemicals and MSDS procedures
  • Thorough knowledge of health and safety regulations
  • Basic Microsoft Office skills
  • Ability to meet department goals and company standards
  • Knowledge of Health, Gaming, FDA, and OSHA regulations
  • Ability to enforce policies and procedures including HACCP

Job Duties

  • Ensure productivity, performance, and safety of banquet stewarding members
  • Monitor and maintain all BOH facilities and systems
  • Generate and oversee daily assignment and work area schedules
  • Manage work area cleaning programs
  • Generate reports when necessary
  • Investigate and report stewarding member injuries or accidents
  • Ensure compliance with Health Department, Gaming, Casino, FDA, and OSHA codes
  • Conduct daily inspections and audits
  • Maintain dishwashers, burnishes, and other equipment
  • Enforce cleaning routines for service-wares and dish room machinery
  • Assist in monitoring venue daily shift inspections
  • Maintain F&B policy manuals
  • Manage breakage reduction program
  • Oversee storage, requisitioning, inventory, and purchasing for banquet stewarding materials
  • Assist with banquet plate-ups and buffet stocking
  • Collaborate with chef and banquet managers on guest needs
  • Conduct training and development for stewarding personnel
  • Administer disciplinary actions and oversee corrective processes
  • Recommend hiring, promotions, and other personnel changes
  • Mentor and develop team members for promotion
  • Report workplace injuries and unsafe conditions
  • Modify duties as necessary
