Job Requirements

  • Ability to communicate effectively in written and verbal form

Job Qualifications

  • Minimum two years culinary experience
  • Proficiency in braising, sautéing, broiling, poaching, meat fabrication, roasting, and cold food preparation
  • Basic knife skills including different knife cuts
  • Knowledge of kitchen and knife equipment
  • Effective communication skills with guests, team members, and management
  • Ability to manage time effectively with minimal supervision
  • Sound judgment and mature decision-making
  • Attention to detail in maintaining appearance and operational standards
  • Ability to work independently within established procedures
  • Familiarity with Food Safety, Sanitation, HACCP, and OSHA guidelines

Job Duties

  • Redefine hospitality by supporting and promoting Graton Resort & Casino values
  • Exhibit proficiency in various cooking techniques including grilling, sautéing, roasting, and cold food preparation
  • Prepare base sauces, stocks, and soups following company recipe guidelines
  • Operate kitchen equipment such as slicers, steamers, deep fryers, ovens, broilers, grills, mixers, kettles, and flat tops
  • Train apprentice cooks in food production methods and proper equipment usage
  • Maintain high standards of personal grooming and uniform in line with company policies
  • Ensure knowledge and compliance with all emergency procedures and locate MSDS booklet for the work area
  • Treat team members with respect and professionalism, encouraging teamwork
  • Communicate consistently with management and participate in daily team huddles
  • Maintain cleanliness, safety, and sanitation standards following health department policies
  • Ensure kitchen equipment is in good working order and report any issues immediately
  • Work hands-on in all kitchen environments managing high-volume production and a variety of food preparation tasks including frying, sautéing, carving, broiling, and steaming
  • Maintain clean and well-stocked work areas including cold salads, sandwiches, cold displays, desserts, and sliced deli meats
  • Follow HACCP guidelines to maintain food safety standards
  • Comply with OSHA regulations to ensure a hazard-free work environment
