Job Requirements

  • High school diploma, GED, or graduate of culinary school
  • 12 months of previous restaurant or customer service experience
  • Must be 18 years or older
  • Must submit to a background check
  • Ability to handle fast-paced and demanding responsibilities physically and mentally
  • Exposure to greasy and dirty materials
  • Ability to walk on slippery floors and enter walk-in refrigeration units
  • Frequent and repetitive arm and wrist movement
  • Exposure to chemicals and noxious odors
  • Ability to lift objects up to 58 lbs and push/pull up to 100 lbs depending on job assignment
  • Ability to stand and walk for long periods in varying kitchen temperatures
  • Ability to climb stairs as necessary
  • Capable of working nights and weekends if required
  • Understand and apply time and attendance guidelines
  • Safe Food Handling and Sanitation Certification may be required upon employment

Job Qualifications

  • High school diploma, GED, or graduate of culinary school
  • 12 months of previous restaurant or customer service experience
  • Skilled in the safe, sanitary, and effective handling of food, cooking utensils, and food processing equipment
  • Proficient in operation of refrigeration units, elevators, cash registers, dishwashers, and time clock systems
  • Ability to perform basic math including addition, subtraction, multiplication, and division
  • Effective reading and interpretation of routine written materials such as menus and instructions
  • Strong communication skills in English, both oral and written
  • Basic understanding of nutrition and portion control
  • Ability to handle varying workloads and meet deadlines
  • Basic computer skills
  • Experience or ability to supervise small staff

Job Duties

  • Determine work priorities and assign work to food service workers and students
  • Provide guidance and training in food preparation, serving techniques, safe operation of equipment and proper sanitation
  • Plan cooking and preparation schedules to assure timetables are met
  • Prepare, season, cook, fire and bake food according to standard recipes following portion control standards
  • Modify recipes and production amounts as needed
  • Ensure optimal quality of food throughout preparation and service
  • Prepare food items for individual serving following portion control standards
  • Determine food quantities and prepare estimates of time, labor, and materials for assigned tasks
  • Oversee maintenance of inventory, food consumption and other food service records
  • Operate a variety of manual and automatic kitchen equipment
  • Handle operational readiness and safety of equipment and supplies
  • Adhere to university and Health Department quality standards
  • Advise supervisor concerning quantity and quality of food and supplies
  • Perform other related duties as assigned
