Job Requirements
- Bachelor's degree in related area and/or equivalent experience/training
- accurate knowledge of food handling policies including CMS, Title 22, and California Retail Food Code
- academic and applied background in clinical nutrition for acute care setting
- knowledge of medical nutrition therapy principles
- understanding of dietary, nutrition, organizational, HR and UC policies
- knowledge of federal, state, and local laws and regulations
- demonstrated leadership skills
- motivational and inspirational to staff
- solid customer service and organizational skills

Job Duties
- Direct the work of food service personnel to ensure timely assembly and delivery of meals and food related supplies
- oversee sanitation practices for compliance with institutional policies and regulatory agency requirements
- supervise Patient Food Service Supervisors and make operational decisions in the absence of managers
- ensure staff follow nutrition and food service standards, training, HACCP, customer service, and sanitation best practices
- establish, monitor, and document quality checks and audits related to patient satisfaction, tray accuracy, cash transactions, catering delivery, and temperature monitoring
- schedule and replace staff as needed to maintain appropriate staffing levels
- collaborate with managers and department supervisors on initiatives and ensure service recovery to maintain customer satisfaction
