Job Requirements

  • Minimum of 2 years prior relevant experience
  • Ability to lead and manage a culinary team

Job Qualifications

  • At least 2 years of relevant culinary experience

  • Experience with budget management and inventory control

  • Ability to develop and execute innovative menu strategies
  • Familiarity with human resources management and compliance
  • Demonstrated ability to work in a fast-paced, high-volume kitchen environment

Job Duties

  • Owns, leads and oversees daily commissary kitchen operations
  • Manages fiscal budgets, labor productivity, scheduling, and inventory control
  • Represents commissary kitchens in divisional, property, or corporate meetings
  • Executes policies, operating procedures, pricing initiatives, training programs, menus and rules for commissary staff
  • Maintains highest standards of health, sanitation and cleanliness
  • Manages human resources responsibilities including teamwork promotion, performance feedback, hiring, training, succession planning, and compliance with company policies and employment laws
  • Interacts with guests to ensure satisfaction and product quality
  • Reviews and executes BEOs, SEOs and MEOs
  • Collaborates with divisional directors, executive chefs and kitchen teams to ensure seamless product delivery
  • Maintains excellent knowledge of food and beverage products, menu items and kitchen equipment
  • Performs additional job-related duties as requested
