Job Requirements
- Obtain Certified Food Protection Manager certificate within 90 days of employment
- Obtain Food Handlers Card within 30 days of employment
- Hold current valid Fingerprint Clearance Card or apply within 20 days of hire
- Have current, valid driver’s license with compliant driving record
- Ability to lift, carry, push, or pull up to 50 pounds
- Ability to operate a fire extinguisher and assist in evacuation procedures
- Work rotating holidays and special private catered events
- Willingness to float among various kitchens on campus
- Full understanding of resident rights including confidentiality and dignity
- Adherence to safety, sanitation, and infection control procedures
- Participate in pre-employment drug screening and background checks
Job Qualifications
- Preferably has a high school diploma or GED equivalent
- Preferably 2 years experience as a Sous Chef or kitchen lead manager
- Preferably 3 years experience in high volume kitchens
- In-depth knowledge of food and beverage service
- Extensive knowledge of food purchasing, preparation, and display
- Ability to work under pressure and meet deadlines
- Knowledge of food safety, sanitation, and safety compliance
- Computer proficiency in Microsoft Word, Excel, Outlook, and Internet
- Strong organizational, multitasking, and creative problem-solving skills
- Effective communication skills in English
Job Duties
- Assist on the line preparing, cooking and plating foods
- Assist in food preparation such as cutting, peeling, chopping and slicing fruits, vegetables, meats, and fish
- Help develop daily and weekly menus and assist with ordering
- Make recommendations for efficiency improvements in food service
- Maintain daily food production records, recipes, temperature and sanitizer logs
- Assist with staff scheduling and control labor costs
- Assist with monthly inventory and control usage of food and equipment
- Communicate with Executive Chef and Sous Chefs on food quality and production
- Report maintenance issues and conduct safety, sanitation, and maintenance programs
- Operate/drive golf cart to transport supplies and employees
- Ensure compliance with resident rights and confidentiality
- Maintain a safe and clean working environment
- Perform other duties as assigned
- Supervise cooks and dishwashers ensuring proper food preparation and cleaning
- Train kitchen staff in preparation methods, safety and cleaning protocols
- Participate in hiring, training, coaching, and performance evaluations
- Address complaints, maintain staff morale, and promote a positive work environment
