Job Requirements

  • High school diploma or equivalent
  • minimum of 3 years kitchen leadership experience
  • knowledge of OSHA and food safety regulations
  • ability to work flexible hours including evenings, weekends, and holidays

Job Duties

  • Directs and participates in food production operations
  • leads, directs, coaches and teaches all kitchen and food production team members
  • assists with recruiting, hiring, and training team members using approved company training materials and certified coaches
  • communicates job expectations and standards, reviews job performance, coaches and holds team members accountable
  • focuses on team member training and skill development
  • prepares daily production list and directs food production activities for meals, banquets and special events in accordance with established recipes, preparation and cooking procedures, timing, portion control, and quality and presentation standards
  • ensures line levels match forecasted sales
  • conducts daily line checks ensuring proper hold temperatures, line levels, portion sizes, quality, freshness and flavor profiles meet company standards
  • ensures compliance with health, safety, and sanitation regulations
  • maintains kitchen cleanliness and organization
  • assists the Chef in preparing annual budget for food, equipment, supplies and labor
  • monitors sales, food and labor costs and adjusts to meet financial metrics
  • performs administrative and reporting tasks related to cost control
  • places food and supply orders and verifies delivered products
  • assists with scheduling and managing staffing levels within budgeted labor costs
  • ensures kitchen equipment safety and maintenance
  • develops training and growth plans for team members
  • enhances dining experience through tableside visits and collaboration with dining room managers
  • represents the company professionally in the restaurant and community
  • sets example for customer service and explains company objectives to team members
  • participates in corporate and restaurant leadership teams and collaborates with chefs at other locations
  • partners with Sales Manager to develop, cost and execute menus for banquets and special events
  • facilitates daily pre-shift meetings
  • creates a cohesive kitchen team culture
  • encourages communication between back-of-house and front-of-house staff
  • fosters an environment of appreciation and recognition
  • performs related duties and projects as assigned
