Job Requirements

  • Three to five years of experience in commercial cooking
  • apprenticeship or certification from culinary school
  • knowledge of food and hygiene regulations including HACCP
  • understanding of financial controls such as food cost management and minimizing waste
  • strong communication and organizational skills
  • leadership abilities
  • proficiency in Microsoft Office and Windows-based applications

Job Duties

  • Executes and supervises food production activities such as cleaning, cutting, marinating, seasoning, and cooking of food items
  • assumes responsibilities of Executive Chef during absences including vacation and off-days and menu presentations
  • supervises, coordinates and controls kitchen helpers in food storage and maintains tidiness following the first in - first out principle
  • conducts, coordinates and supervises inventories
  • monitors material consumption and orders required food and equipment daily to satisfy production plans
  • participates in the development of food products and menus for presentations
  • stays updated with catering manuals and executes countermeasures in response to customer complaints
  • supports training of kitchen helpers
  • maintains and monitors hygiene, health and safety standards and ensures HACCP regulations are followed
  • performs quality control checks according to HACCP
  • inspects goods received for quality compliance
  • monitors and ensures adherence to recipe specifications
  • organizes, staffs and directs area of responsibility
  • guides and motivates subordinate employees in line with Human Resources Policy
  • promotes company values and management principles within the department
  • manages cost budget and initiates corrective actions for deviations
  • participates in and supports company initiatives such as Global Quality Standard, HACCP, and Lean Manufacturing
