Job Requirements

  • three to five years of experience in commercial cooking or apprenticeship or certification from culinary school
  • knowledge of food and hygiene regulations including HACCP
  • understanding of financial controls to keep food cost within budget control stock levels and minimize waste
  • good communication and organizational skills
  • service orientation
  • leadership skills
  • proficiency in Microsoft Office and Windows-based computer applications

Job Duties

  • execute and supervise food production activities including cleaning cutting marinating seasoning and cooking of food items
  • assume responsibilities of Executive Chef during absences including vacation and off-days
  • supervise coordinate and control kitchen helpers in food storage ensuring tidiness and FIFO principles
  • conduct coordinate and supervise inventories
  • monitor material consumption and order required food and equipment daily to meet production plan
  • participate in development of food products and menus for presentations
  • maintain and monitor hygiene health and safety standards ensuring HACCP regulations adherence
  • perform quality control checks according to HACCP regulations
  • conduct quality checks of goods received
  • ensure compliance with recipe specifications
  • organize staff scheduling and direct kitchen operations within area of responsibility
  • guide motivate and develop subordinate employees in line with human resources policies
  • promote company values and management principles within the department
  • implement and control cost budgets and initiate corrective actions when necessary
  • participate in and support company initiatives such as Global Quality Standard HACCP and Lean Manufacturing
  • support training of kitchen helpers
  • execute countermeasures in production in case of customer complaints
