Job Requirements

  • must be 21 years or older
  • associate degree in related field or equivalent experience
  • preferred food service or Culinary Arts degree
  • 2 years related supervisory culinary work experience
  • 5 years kitchen experience
  • excellent organizational skills and attention to detail
  • strong analytical and problem-solving skills
  • strong supervisory and leadership skills
  • well-rounded food background administrative and people skills
  • extensive knowledge of all kitchen equipment
  • demonstrates commitment to guest service excellence and ethical conduct
  • gaming license required
  • ServSafe certification required

Job Duties

  • evaluate current needs past experiences and forecasted business conditions to make resource allocation decisions and recommendations
  • monitor and evaluate food preparation to ensure quality consistency and adherence to recipes and techniques
  • assist Market Manager in developing large party menus meeting client requests cost requirements and preparation feasibility
  • select schedule direct supervise train and develop culinary staff
  • create and determine menu and special costs
  • develop and maintain recipe cards and specifications for quality consistency portion and cost control
  • ensure compliance with all department and company rules and regulations
  • monitor kitchen sanitation and stock storage and rotation
  • develop and ensure compliance with departmental budget
  • maintain quality and organization of food outlets
  • perform and oversee food purchases inventory stock ordering receiving
  • organize outlets for efficient appetizing service and maintain quality standards
  • meet special guests and attend periodic meetings and training sessions
  • learn and manage POS or other inventory systems
  • maintain inventories through POS or other systems
  • present a neat and clean appearance at all times
  • perform other duties as assigned
