Job Requirements

  • High school diploma or GED
  • minimum five years cooking experience in high-volume dining
  • minimum two years supervisory experience
  • possession of Maricopa County Food Handlers Card
  • ServSafe Certification
  • proficiency in Microsoft Office applications
  • experience with timekeeping and payroll systems
  • experience with inventory and purchasing systems
  • ability to work varied shifts
  • strong physical stamina
  • ability to lift up to 50 pounds
  • excellent communication skills
  • fluent in English
  • ability to comply with safety and health standards
  • ability to maintain cleanliness and quality standards in kitchen
  • must be well-groomed

Job Qualifications

  • experience in fine dining or upscale dining environments
  • demonstrated use of local products
  • ability to execute chef's table special menus
  • experience with food and wine pairings
  • menu development skills
  • knowledge of classical sauce and stock making
  • expertise in meat, fish, poultry, and game cutting
  • current Maricopa County Food Handlers Card
  • ServSafe Certification
  • good PC skills including Microsoft Office
  • experience with timekeeping and payroll systems
  • strong interpersonal and communication skills

  • ability to manage multiple tasks

Job Duties

  • Provide supervision and support to all kitchen personnel
  • ensure all food served is prepared properly and meets quality standards
  • follow all safety procedures in kitchen and food service areas
  • maintain professional grooming and wear provided uniform
  • complete all kitchen prep work by specified times
  • assume full management responsibility in the Restaurant Chef's absence
  • prepare special orders upon request
  • spot-check food preparation for quality and accuracy
  • direct and instruct kitchen staff in their tasks
  • correct improperly prepared items
  • maintain kitchen equipment
  • coordinate with support departments for goods and services acquisition
  • work to maintain food costs within budget
  • ensure supply stock at par levels
  • assist in food preparation and production
  • inspect kitchen cleanliness
  • maintain accurate recipe books
  • set and maintain food specifications
  • enforce safety and health standards
  • hire and train Tribal Members per casino guidelines
  • stay updated on culinary trends
  • represent Orange Sky Restaurant at off-property functions
