Job Requirements
- Five years of luxury resort or hotel experience
- Two years’ experience as a sous chef
- Unexpired food safety certification
- Excellent cooking, supervisory and sanitation skills
- Knowledge of all stations
- Broad knowledge of varied cuisines and ability to integrate regional ingredients to menus
- Ability to present cooking demonstrations
- Computer knowledge of MS Office Suite including Word, Excel, and cost control apps
- Valid California driver’s license

- Graduate of accredited culinary program or apprenticeship under highly respected chef at a premier restaurant, resort or hotel property preferred
- Certification by the American Culinary Federation and certification as a sous chef preferred
Job Duties
- Assist in the preparation of daily food orders
- Check the quality of daily specials before service
- Conduct daily huddles with culinary team and participate in front of house huddles
- Interact with guests regarding special needs and requests
- Maintain a professional attitude in a high-volume environment
- Adjust schedule based on levels of business
- Prepare weekly schedule for all cooks in accordance with business needs, avoiding over staffing and overtime
- Prepare and submit daily requisitions using systems in place e.g., Eatec
- Train all kitchen employees in their individual duties and required knowledge and skills
- Mentor and manage kitchen employees
- Work holidays, weekends, including special events
- Control waste and spoilage through constant attention to detail, logging waste per SOP
- Perform month-end inventories
- Assist in seasonal menu review and revisions
- Prepare and cook food to the highest standards in a timely manner
- Report any faulty equipment or unsafe conditions directly to the Engineering department
- Communicate effectively with staff from both the front and back of the house
