Job Requirements

  • Preference given to qualified Santa Ana Tribal members
  • High school diploma or GED
  • AA or Culinary Arts degree and 4+ years relevant experience
  • New Mexico liquor server’s license and Food handler’s card within 90 days of hire
  • Availability to work various shifts including days, evenings, weekends, and holidays
  • Professional appearance required
  • Must have strong interpersonal and communication skills
  • Ability to write accurate recipes and correspondence
  • Must be bilingual preferred
  • Smartphone capable of running company applications
  • Must obtain and maintain Pueblo of Santa Ana Gaming and Regulatory Commission key gaming license
  • Must be able to lift up to 40lbs and move up to 75 pounds
  • Must be able to stand and walk for extended periods
  • Must maintain confidentiality
  • Must handle conflict professionally
  • Must be a team player
  • Must work in a fast-paced environment

Job Qualifications

  • High school diploma or GED
  • AA or Culinary Arts degree from an accredited institution
  • Minimum 4 years experience as a Sous Chef or in a steakhouse/fine dining environment
  • ACF-CEC certification preferred
  • Excellent written and verbal communication skills
  • Ability to write recipes, reports, and procedure manuals
  • Professional appearance and strong interpersonal skills
  • Bilingual and multicultural experience preferred

Job Duties

  • Oversee day-to-day operations of the casino steakhouse
  • Create specials and ensure menu consistency
  • Train, mentor, and develop culinary and utility staff
  • Manage ordering, inventory, and scheduling
  • Conduct safety and sanitation inspections
  • Communicate effectively with front and back-of-house teams
  • Control food and labor costs
  • Resolve conflicts professionally
  • Maintain compliance with health codes and company policies
  • Execute directives from the Executive Chef
  • Maintain departmental files and track performance
  • Collaborate in menu planning and changes
