Job Requirements
- High school education or GED
- Graduate of culinary arts or apprenticeship program or three years additional supervisory experience
- Minimum of two years experience as sous chef or food service management
- Current ServSafe Food Handler certificate prior to deployment
- Valid driver’s license
- Valid U.S. passport
- U.S. citizenship or permanent residency
- Ability to stand for up to 12 hours
- Ability to lift from 10 to 50 pounds safely
- Willingness to work extended periods in remote locations
- Ability to perceive oral and written instructions
- Ability to work long hours and weeks away from home
- Capacity to work in a fast-paced and challenging environment.
Job Qualifications
- High school education or GED
- Graduate of a culinary arts or apprenticeship program
- Minimum of two years Sous Chef or food service management experience
- Experience with Food Services in Antarctica may be accepted
- Current ServSafe Food Handler certificate
- Valid driver’s license
- Valid U.S. passport
- Strong leadership and communication skills
- Ability to work in challenging and dynamic environments
- Proven capability to develop cohesive teams
- Knowledge of food safety and sanitation standards
- Experience in large volume meal production
- Ability to follow standardized and develop high volume recipes
- Familiarity with safety regulations and workplace safety programs.
Job Duties
- Supervise, train and work with production cooks to produce high quality, large volume meals including breakfast, lunch, and dinner, desserts, breads, and pastries
- Maintain clean and sanitary work areas, equipment and tools in a professional manner
- Assist Food Service Supervisor (FSS) and others as necessary
- Prepare all items on a 35-day menu cycle, holiday menu items and food for special occasions
- Communicate and coordinate with other Sous Chefs and/or Food Service Coordinator on utilization of leftovers, production information and fresh produce usage
- Taste, adjust flavors and oversee presentation of foods
- Educate staff on proper cooking techniques and holding temperatures
- Conduct daily production meetings to assign tasks and overview menu
- Coordinate, monitor and expedite batch cooking methods before and during services
- Produce baked items as scheduled and support deli and flight meals
- Anticipate and prepare alternate menu items if primary items are insufficient
- Ensure adherence to Standard Operating Procedures and food services department tasks
- Display strong leadership, communication and organizational skills in a supervisory capacity
- Maintain a positive and flexible attitude in a fast-paced environment
- Oversee safety and sanitation in kitchen including equipment use and cleaning
- Manage proper labeling, dating and utilization of leftovers
- Place weekly food orders and specialty bread orders timely
- Record quantities of food items prepared, served and discarded
- Coordinate with Stewards for cleaning activities
- Train employees on operations metrics and performance
- Implement and maintain safe workplace programs
- Perform other duties as required.
