Job Requirements
- Associate's degree in culinary, food service, hospitality, business management or related field required
- Minimum two years' experience in large hotel or casino operation
- Culinary degree from an accredited culinary institute preferred
- Must obtain and maintain a current Food Handler's Card
- Must obtain and maintain a ServSafe certificate
- Must obtain and maintain a negative tuberculosis test
- May be required to obtain and maintain a gaming license
- Valid driver's license and vehicle insurance with minimum liability limits required for commuting between locations
- Ability to work evening, weekend and holiday shifts
- Strength to lift and move up to 40 pounds occasionally
- Ability to work in fast-paced, high-demand kitchen environment
- Must present a neat, clean and well-groomed appearance
- Travel to attend meetings, trade shows and conferences as needed
Job Qualifications
- Associate's degree in culinary, food service, hospitality, business management or related field
- Culinary degree from an accredited culinary institute preferred
- Minimum two years experience in large hotel or casino operation involving high volume production and multi-unit management
- Management training and/or culinary education preferred
- Ability to handle high volume a la carte and banquet production
- Strong management and staff training skills
- Knowledge of menu development techniques and recipe creation
- Understanding of corrective counseling and documentation procedures
Job Duties
- Maintain and ensure all recipes, flavor profiles, consistency in quality, appearance and production timeframes are adhered to for all menu/food items
- Work with venue and culinary management to control all financial aspects of kitchen operations, including food cost, labor cost and purchasing
- Ensure safe working conditions and compliance with Health Department, Gaming, OSHA and FDA regulations
- Maintain cleanliness, organization and preparedness of workspace and adjacent areas
- Schedule kitchen staff within budgeted labor costs and approve vacation requests
- Train, supervise and coordinate activities of subordinate cooks, stewards and kitchen personnel
- Complete all necessary logs, requisitions and paperwork accurately and on time
