Job Requirements
- High school diploma or equivalent
- Minimum of five years of experience as a chef in a hospitality setting
- Certification as a chef or certified master chef by a recognized culinary body
- Valid drivers license if operating vehicles is required
- Safe server alcohol and food handlers certification
- Ability to stand and exert mobility for extended periods
- Ability to lift up to 45 pounds and maneuver carts up to 250 pounds
- Good communication skills verbally and in writing
- Basic computational skills
- Ability to use computer programs and manage payroll and budgets
- Ability to comply with company grooming and attendance policies
- Ability to work independently and as part of a team
- Ability to speak, read, write, and understand the primary workplace language
Job Qualifications
- High school diploma or equivalent
- Minimum of two years of culinary schooling preferred
- Five years of prior experience as a chef with knowledge of international and domestic dishes
- Extensive knowledge of wine pairing
- Certification as Chef or Certified Master Chef from a government-accredited culinary agency
- Safe Server Alcohol and Food Handlers certification
- CPR or First Aid training preferred
- Excellent leadership and customer relations skills
- Detail oriented with outstanding organizational and communication skills
- Intermediate computer skills including Windows OS and MS Office
- Knowledge of PMS, PBX, Key systems, and POS
- Strong analytical skills with attention to detail
- Knowledge of federal and state employment laws
- Thorough knowledge of food products, standard recipes, and preparation
- Ability to create recipes, menus, and support materials
- Artistic ability to design theme menus and decorations
- Ability to conduct meetings and maintain communication between staff and managers
Job Duties
- Supervise and coordinate activities of lead cooks, line cooks, prep cooks, and stewards
- Responsible for enhancing the food product presented to guests and recommending changes based on market research
- Read menu to estimate food requirements and order products and supplies from vendors
- Lead preparation and production of meals ensuring food quality and presentation
- Supervise staff in all food preparation including proper receiving and storage of food items
- Expedite peak meal periods with a hands-on approach
- Ensure compliance with safety and sanitation standards, team productivity, cost control, and overall profitability
- Visually inspect, select, and use quality food and beverage products
- Create and implement new menus and individual food items
- Set sanitation and product rotation standards ensuring food cost control
- Liaise between culinary team and other hotel departments
- Participate in and oversee monthly food inventories
- Maintain food quality and consistency in delivery and standards
- Support Executive Committee with food cost, payroll, and profit performance
- Manage culinary team payroll and daily attendance system
- Conduct and participate in monthly departmental meetings
- Evaluate staff performance and encourage improvement
- Arrange and supervise training of new staff and cross-train existing staff
- Serve as a role model adhering to policies and high performance standards
- Assist with guest inquiries and other reasonable duties as assigned
