Job Requirements

  • High school or equivalent education
  • minimum two years culinary schooling preferred
  • five years experience as Chef
  • certification as Chef or Certified Master Chef
  • safe server alcohol and food handlers certification
  • ability to provide and maintain valid drivers license
  • good communication skills
  • excellent leadership skills
  • detail oriented
  • intermediate computer skills
  • knowledge of employment laws
  • physical ability to work in extreme temperatures
  • ability to stand and move for extended periods
  • ability to lift up to 45 lbs
  • ability to push and pull carts and equipment up to 250 lbs
  • ability to bend, stoop, squat and stretch
  • finger dexterity to operate office equipment

Job Qualifications

  • High school or equivalent education
  • minimum of two years culinary schooling preferred
  • five years prior experience as Chef with knowledge of international and domestic dishes
  • extensive knowledge of wine pairing
  • certification as Chef or Certified Master Chef by government accredited agency
  • safe server alcohol and food handlers certification
  • ability to provide and maintain valid drivers license
  • CPR certification and/or first aid training preferred
  • good communication skills verbal, written and electronic
  • excellent leadership and customer relations skills
  • detail oriented with outstanding organization and communication abilities
  • intermediate computer skills
  • knowledge of complex mathematical calculations and computer programs
  • knowledge of Windows OS, MS Office, PMS, PBX, key system, and POS
  • strong issue resolution and analytical skills
  • knowledge of employment laws and culinary standards
  • ability to create theme menus and support material
  • artistic ability and insight into marketing, cost and wage control

Job Duties

  • Supervise and coordinate activities of lead cooks, line cooks, prep cooks, and stewards
  • responsible for enhancing the food product presented to guests
  • recommend changes and use market research to develop new products
  • read menu to estimate food requirements and order food products and supplies from vendors
  • lead the preparation and production of meals, food quality and presentation
  • supervise staff in all food preparation including receiving and storage
  • expedite peak meal periods with hands-on approach
  • ensure compliance with all safety and sanitation standards and regulations
  • visually inspect and select quality food and beverage products
  • create and implement new menus and individual food items
  • set targeted sanitation standards, product rotation and control food cost
  • act as liaison between culinary team and other hotel departments
  • participate in monthly food inventories
  • maintain quality and consistency of food delivery
  • support Executive Committee and Executive Chef
  • maintain food costs within budget guidelines
  • participate in hiring new staff
  • conduct and participate in monthly departmental meetings
  • manage payroll and time attendance system
  • evaluate and encourage staff performance
  • arrange and supervise training and cross-training
  • serve as role model adhering to policies, standards and conduct
  • be familiar with company benefits and policies
