Job Requirements
- High school diploma or equivalent
- Minimum two years of culinary schooling preferred
- Five years of prior experience as Chef with knowledge of most international and domestic dishes
- Certification as Chef or Certified Master Chef by a government accredited culinary agency
- Safe Server Alcohol and Food Handlers certification
- Valid driver’s license
- CPR certification and/or First Aid training preferred
- Ability to speak, read, write, and understand the primary language used in the workplace
- Good communication skills including verbal, written and electronic communication
- Knowledge of complex math, computer programs, and budget analysis
- Leadership capability and customer relations skills
- Detail orientation with organizational and communication skills
- Intermediate computer skills
- Basic computational skills
- Knowledge of employment, safety, and labor laws
- Knowledge of food products, recipes, and preparation standards
- Ability to distinguish food quality and presentation
- Ability to conduct meetings and maintain communication
- Artistic ability for menu and presentation design

- Extensive knowledge of wine pairing
- Certification as Chef or Certified Master Chef by a government accredited culinary agency
- Safe Server Alcohol and Food Handlers certification
- Valid driver’s license
- CPR certification and/or First Aid training preferred
- Excellent leadership and customer relations skills
- Detail oriented with outstanding organizational and communication skills
- Intermediate computer skills including Windows OS, MS Office, PMS, PBX, Key system, and POS
- Strong analytical, mathematical, and budgetary skills
- Knowledge of federal, state, and local employment and safety laws
- Knowledge of food products, standard recipes, and preparation
- Ability to conduct meetings, menu briefings, and maintain communication between staff and management
- Artistic creativity for menu development and presentation
- Ability to create recipes and visual support materials
Job Duties
- Supervise and coordinate activities of lead cooks, line cooks, prep cooks, and stewards
- Enhance the food product presented to guests by recommending changes and developing new menu items using market research
- Estimate food requirements and order supplies from vendors
- Lead the preparation and production of meals including food quality and presentation
- Ensure proper receiving, storage, and sanitation of all food items
- Expedite peak meal periods with a hands-on approach
- Ensure compliance with safety, sanitation, cost control, and profitability standards
- Visually inspect and select quality food and beverage products
- Create and implement new menus and individual food items
- Set sanitation and product rotation standards and monitor food cost
- Serve as liaison between culinary team and other hotel departments
- Conduct monthly food inventories and maintain consistent food quality
- Support Executive Committee with food cost, payroll and profit performance data
- Manage culinary team payroll and attendance
- Evaluate and improve staff performance and conduct training and cross-training
- Uphold highest standards of conduct, punctuality, and performance
- Follow company benefits, policies and safety procedures
- Assist with guest inquiries and report maintenance or safety issues
- Perform other reasonable job duties as assigned
