Job Requirements
- High school diploma or equivalent
- 3-5 years of leadership experience in a high-volume kitchen
- experience in hotel kitchen environment required
- availability to work full-time including weekdays, weekends and holidays
- knowledge of food safety and sanitation
- ability to manage and lead a team of 16
- strong organizational and multitasking skills
- effective communication abilities
- willingness to work in a unionized setting preferred
Job Qualifications
- 3-5 years of leadership experience in a high-volume kitchen
- culinary degree or relevant certification preferred
- prior Sous Chef experience preferred
- experience in a hotel kitchen environment required
- experience working in a union environment preferred
- strong skills in team development and mentoring
- expertise in scheduling, ordering, inventory management and cost control
- knowledge of food safety and sanitation standards
- excellent communication and leadership skills
- passion for food, creativity and excellence
Job Duties
- Assist the Executive Chef in the direction and oversight of all culinary operations
- include preparation and production of all hotel meals
- ensure food quality and presentation meets standards
- maintain compliance with all safety and sanitation standards and regulations
- oversee team member productivity and performance
- implement policies and procedures for cost controls and profitability
- create and implement menu selections for special banquet themes and events
- ensure compliance with federal, state, local and company health, safety, sanitation and alcohol awareness standards
- monitor and develop team member performance
- provide supervision, conduct counseling and assist with evaluations
- train, schedule and assign work
- deliver recognition and reward to team members
