Job Requirements

  • High school education or GED
  • culinary arts or apprenticeship program graduation or equivalent supervisory experience
  • current ServSafe Food Handler certificate prior to deployment
  • valid driver's license
  • valid U.S. passport
  • minimum two years Sous Chef or food service management experience
  • US citizenship or permanent residency
  • ability to stand for long periods
  • capacity to lift up to 50 pounds safely
  • ability to work in isolated, extreme environment
  • strong leadership and communication skills
  • flexibility and positive attitude
  • willingness to comply with safety and environmental standards

Job Qualifications

  • High school education or GED
  • graduate of a culinary arts or apprenticeship program
  • three years additional supervisory experience in a high volume food service capacity accepted in lieu of degree
  • current ServSafe Food Handler certificate
  • valid driver's license
  • valid U.S. passport
  • minimum two years Sous Chef or food service management experience
  • previous Food Services experience in Antarctica may substitute minimum experience
  • US citizenship or permanent residency

Job Duties

  • Supervise, train and work with Production Cooks to produce high quality, large volume meals including breakfast, lunch, and dinner, desserts, breads, and pastries
  • maintain clean and sanitary work areas, equipment and tools in a professional manner
  • assist Food Service Supervisor and others as necessary
  • prepare all items on a 35-day menu cycle, holiday menus and special occasion foods
  • communicate and coordinate with other Sous Chefs and Food Service Coordinator for utilization of leftovers and production information
  • taste, adjust flavors, and present foods
  • educate staff on proper cooking techniques and holding temperatures
  • confer with Food Service Coordinator on production schedule and participate in menu planning meetings
  • conduct daily production meetings to assign tasks
  • coordinate and expedite batch cooking methods
  • produce baked items and support deli and specialty functions
  • monitor proper baking techniques and oven temperatures
  • anticipate need for alternate menu items
  • follow standardized recipes and develop high volume recipes as needed
  • adhere to Standard Operating Procedures and tasking responsibilities
  • display strong leadership, communication and organizational skills
  • develop a cohesive team unit
  • maintain flexibility and positive attitude
  • coordinate thawing procedures
  • ensure safety and sanitation including equipment usage and cleaning
  • manage food labeling and leftover utilization
  • place weekly food orders
  • record food quantities prepared, served and discarded
  • honor late arrival requests
  • coordinate with Stewards for timely dish transfer
  • support Operations Division metrics
  • comply with ASC Environmental Health & Safety and Quality Assurance requirements
  • implement and maintain safe workplace program
  • able to stand up to 12 hours
  • able to lift safely as regulated
  • perform other duties as required
