Job Requirements

  • Experience with financial management including understanding P&L statements, managing operating budgets, forecasting and scheduling
  • Experience in a culinary leadership role
  • Knowledge of kitchen safety and sanitation standards
  • Ability to supervise multiple teams
  • Strong organizational and communication skills
  • Culinary degree or equivalent experience
  • Ability to work flexible hours including evenings and weekends
  • Familiarity with hazardous materials handling and compliance
  • Excellent problem-solving skills
  • Ability to train and mentor staff effectively
  • Knowledge of hotel and banquet operations

Job Qualifications

  • Culinary degree preferred
  • Understanding of restaurant, room service, bar/lounge, and banquet department procedures
  • Knowledge of basic sanitation requirements and food handling safety standards
  • Effective decision making skills
  • Strong customer and associate relations skills
  • Knowledge of overall hotel operations as they relate to the kitchen
  • Ability to effectively manage labor productivity
  • Good presentation and platform skills
  • Good communication skills including verbal, listening, and writing
  • Strong organization skills

  • Effective change management skills
  • Good training and facilitator skills
  • Knowledge of purchasing, inventory controls, supplies and equipment
  • Knowledge of governmental regulations and safety standards such as OSHA, EPA, ADA, CFC, NFPA

Job Duties

  • Perform all duties of culinary and related kitchen area associates to train new associates and assist during high demand times
  • Supervise daily shift operations and oversee production and preparation of culinary items
  • Open and close kitchen shifts and ensure completion of assigned duties
  • Maintain food handling and sanitation standards
  • Work with restaurant and banquet departments to coordinate service and timing of events and meals
  • Assist with developing menus and promotions
  • Operate all department equipment and report malfunctions
  • Purchase supplies and manage food and supply inventories according to budget
  • Supervise staffing levels to meet guest service, operational needs and financial objectives
  • Understand and implement safety standards
  • Develop cleaning schedules for associates and ensure compliance
  • Ensure associates have proper supplies, equipment and uniforms
  • Communicate areas needing attention and follow up
  • Train associates in safety procedures and supervise emergency procedures
  • Participate in investigation of associate accidents
  • Comply with loss prevention policies and procedures
  • Oversee stewarding team operations including hiring guidelines and standards
  • Ensure clean and safe kitchen areas
  • Coordinate with banquet team for china, glass and silver handling
  • Maintain back dock cleanliness and organization
  • Ensure adequate cleaning chemical supplies and requisition as needed
  • Manage compliance with safety and Hazardous Material Management Program procedures
